Description

Agidi Jollof is a complete meal that doesn’t cost much, it’s a lovely pap recipe, you’ll love it

Ingredients
  • 2 cups Blended Tomato, Pepper and Onion Puree
  • 1 onion
  • Beef Bones (biscuit bones) any Quantity
  • 3/4 Tablespoons Palm Oil (Optional)
  • Vegetable Oil
  • Salt to Taste
  • 2 Seasoning Cubes
  • 1 stock cube
Instructions
  1. Wash and season the meat (diced) with seasoning cube, half of the onions (chopped) and salt to taste.

  2. Boil the meat in little water till the bones get soft.

  3. While boiling the meat, blend the tomato, pepper and the remaining onions in a blender and set aside.

  4. Heat the oil in a saucepan over medium heat and fry the tomato puree for about 3 minutes.

  5. Add the meat, bones and stock with a little water and allow to cook.

  6. Make a paste of the pap, reduce the heat to low and pour the paste into the tomato mixture whiling stirring consistently.

  7. Increase the heat to medium as the mixture thickens.

  8. Remove from heat once it thickens like pap.

  9. Scoop the mixture into washed broad leaves and allow to cool and set.

  10. Serve.
