Gizdodo is a mouthwatering and an appetizing simple sauce that is often served with different side dishes especially Jollof rice and plain boiled rice.
Remove the plantain peel and dice into desired sizes.
Dice the tomatoes, peppers, and Onions.
Shred the green pepper and yellow bell pepper
Then wash the gizzards with salt and warm water
Put in a clean pot, season and boil for 15 mins
When the gizzard is soft
Dice to smaller cubes
Deep Fry the plantain with 400ml of vegetable oil until it turns golden and keep in a clean bowl.
Sauté the chopped gizzard briefly. (The gizzard would be dark-brown when it is properly sautéed)
Put a wok or sauce pan on a medium heat
Add in the diced onions and allow to fry for 20 sec
Add in the diced fresh pepper, shredded green pepper, shredded yellow bell pepper and tomatoes
Then add the salt and seasoning cubes
Allow to simmer for 20 secs
Put in the gizzard and 100ml water
Stir and allow to fry for 5 min
Your gizdodo sauce is ready.
