Description

Jollof Couscous is a one pot aromatic, easy, flavorful and delicious dish.

Ingredients
  • 2 cups Couscous
  • 1 Cup chicken or beef stock
  • 2 tbsp Vegetable oil
  • 2 cups freshly chopped vegetables (Onion, tomatoes, red and green peppers and spring onions)
  • 1/2 teaspoon red or black pepper
  • 1/2 teaspoon salt
  • 1 cube magi
  • 1/2 Ghana pepper
Instructions
  1. Bring chicken stock to a rolling boil, add in couscous and cover tightly.

  2. Remove from heat and set aside for 5-6mins

  3. Add vegetable oil to a large pan and heat slightly.

  4. Add in the chopped vegetables, pepper, salt and magi.

  5. Toss and leave to cook for 3mins

  6. Lightly fluff the cooked couscous with a fork, add into the vegetable mix.

  7. Add in the Ghana pepper if using.

  8. Taste and adjust for seasoning.

  9. Couscous is ready to serve. Garnish with plantain if you want
