This lovely pepper soup is a very delicious and healthy meal, it is one of the recommended healthy pepper soup recipes for everyone especially those with cold, as they will get to enjoy the spicy yam, which has absorbed the rich flavor from the meat giving it an esthetic taste.
Peel yam and cut into smaller cubes, rinse in water and set aside.
Cut meat into tiny pieces and separate the tougher meat (tripe) from the tenderloin.
Season the tripe, which is tougher with pepper, salt, onion, 1 stock cube, ground nutmeg, and mix well.
Add 1 cup of water to the meat and bring to a boil, cook the tripe for 20 minutes until it is almost tender.
At this point, the liquid must have reduced, add 1 cup of water to the content and then combine the tenderloin and the yam cubes to cook with the tripe.
Add in more onion, pepper, 2 beef stock cubes and ground calabash nutmeg, stir and taste for salt. Leave it to cook for 20 minutes until the yam and the beef are soft.
Once the yam is soft, add in the chopped basil to garnish the pepper soup, stir very well to combine.
Cook for few minutes on medium heat and your yam pepper soup is ready.
Serve yam pepper soup as e dey hot and enjoy your main meal.
