  1. Prepare The Base: Heat the vegetable oil in a large pot over medium heat.  Add the chopped onions and sauté until translucent. Stir in the minced garlic and grated ginger, and cook until fragrant.
  2.  Add the Tomato Base: Pour in the blended tomato puree and red bell pepper. Add the tomato paste and stir well to combine. Allow the mixture to cook down for about 10-15 minutes, stirring occasionally, until it thickens and the oil starts to separate.
  3. Seasonings and Spices: Stir in the paprika, curry powder, thyme, smoked paprika, dried thyme, and dried oregano. Add the chopped scotch bonnet pepper for heat, adjusting the amount to suit your preference. Season with salt and pepper to taste.
  4. Rice and Broth: Rinse the rice under cold water until the water runs clear, then drain. Add the rice to the pot and stir until well coated with the tomato mixture. Pour in the chicken or vegetable broth and coconut milk, stirring gently to combine.
