Chicken Salad
Hmmm! Yummy!!! Chicken salad is always a must have for our lovely occasions and thanksgivings, this salad recipe makes a delicious and quick meal. Always a favorite!

Place the chicken in a large sauce pan and cover with water

Add the peppercorn and bay leaves and bring to a gentle simmer poach gently for about 40mins and leave it to cool in the liquid

Once cool take the chicken out of the pan, remove the skin and shred the meat, cover and place in the refrigerator

Dry fry the cumin and almonds in a hot pan and leave to cool

To make the dressing, mix the yogurt, mayonnaise and lemon juice in a large bowl

Add the chicken, cucumber and almonds with the torn basil.

Mix well with vinaigrette
